Enforce to create checksum files as UTF-8.

Sometimes I need to hash files with Japanese or Chinese filename. And I found created checksum files were not always encoded as UTF-8.
Is it possible to "Enforce to create checksum files as UTF-8" or just add as an option?

Thanks for your suggestion. I will add it, it's a good idea, and easy to add.
