How can I retain the original date of a file

I want my files to reflect the original date it was added, not the date it was accessed. This especially applies to my pictures. I don't want the dates changed.

By default TC shows the writedate which is the date the file was last changed.
If you see the accessdate wich is the last date the file has been opened, you must be using a Custom columns view.

Some software that transfers photos from cameras and smartphones changes the creationdate to the current date during the transfer - that is not TC's fault.
