Change to <default> should reset the view, right?
Change the view mode to one of my own custom and then back to default does not work, the view of the custom remains.

No it doesn't. You can define the properties of view mode <default> like other view modes.

It works fine here, what happens might depend on your settings for the <default> view.
What is it that is not reset? Colums view, Sort order - If they are set to Unchanged in the <default> View, then you won't see a change, If it is Colors or folder tab icon, then it should be reset.
