If you copy files, and the target device runs out of space, you normally get a message telling you that the device is full, and you also get an option to skip all files that do not fit, which causes the copy process to continue with all files that are small enough, thus optimally filling the target.
But if the target is a UDF file system, the behaviour is completely different: If the device runs full, you are asked whether you want to replace the file (date: right now, size: 0) by the "old" file. There is also no option to skip all files. You can only skip this particular file or stop the complete copy process. After the copy process has finished, you find an empty placeholder of every skipped file on the target.
This also happens on synchronisation.

I found UDF to be very unreliable, so I have stopped using it for backups many years ago. It seems that the UDF driver is reporting weird errors instead of the correct "disk full" error.
