Column headers - the ability to lock the sort options

Can I lock sort options in the header tabs?
I mean this one:

Quite often, I accidentally click there and the sort changes. I'd like to set this up and lock sorting

By comparison, there is such an add-on for Thunderbird - https://addons.thunderbird.net/pl/thunderbird/addon/no-message-pane-sort-by-mouse/

No you can't, but you could hide the header tabs to prevent the click on them:
Configuration - Options - Layout: uncheck "Show tabstop header".
